12 large mushrooms
2-1/2 oz. cooked ham, finely chopped
1/4 cup red bell pepper, finely chopped
1/2 medium onion, finely chopped
2 Tbsp 99% fat-free chicken broth
1/3 cup Italian bread crumbs


How Do I Make Ham-Stuffed Mushrooms?

Here is how you make Ham-Stuffed Mushrooms:

Preheat oven to 350 degrees F. Wash mushrooms and separate stems from caps. Finely chop stems and set aside. Save caps to fill later. Add chopped ham, pepper and onion to a skillet and saute until tender. Add chopped mushroom stems and cook until tender. Remove from heat. Add chicken broth and bread crumbs. Stir to moisten. If mixture appears too dry, add up to 1 more tablespoon of chicken broth. Fill mushroom caps with mixture and set inside shallow baking dish. Add up to 1/4 cup water to bottom of dish for additional moisture (optional). Bake at 350 degrees F for 25 minutes.
