I made these with what I had on-hand. I can tweek this countless ways. This was purty darn tasty, though, and filling! I served it with a side of Isreali couscous I prepared in chicken broth for flavor and richness. You can use less bacon, or add shredded chicken, or black beans or Great Northern beans if you want. I just used what I needed to use up in the fridge, so that is what I went with.It may seem odd, but to cut down on over-all cooking times of the veggies I always pop them in the microwave for about two minutes to "steam" them, and then I add them to the skillet. Nothing is ever mushy, always the perfect balance of cooked but crisp.When I make this next time I'll save calories by using less bacon and cheese. It can easily be a less than 300 calorie offering. Again, I used up food I had, and these were the proportions of it all. Still. not to shabby! It was a bit high for me, but not at all fo rmy hubby.

1/4 cup red pepper slices - - - microwave for about 2 min
1/4 cup sliced mushroom pieces (any type) - - - - microwave for about 2 min
1/4 cup dry Italian seasoned bread crumbs
2 TB balsamic vinegar
salt, pepper

2 large portobella mushroom caps (5-6 inches across)
3 oz shredded part skim mozzarella

nonstick spray

Here is how you make Little Diva's Stuffed Portobella Mushroom Caps:

Preheat oven to 375.Grab a big nonstick skillet and cook up your bacon over medium-high heat. While that is going, I start to pop the veggies into the microwave to "steam" them a little.When the bacon gets nice and chewy but crispy (just judge for your own likeness), throw in the onions. When they soften up, add the squashes, then the mushrooms, and the peppers. Cook it all together for about 10 minutes.While that is going, spray a cookie sheet or whatever you grab first, with some non-stick spray. Take your mushroom caps and face them open-side down into the pan and spray it with some non-stick spray; salt and pepper them. Flip them back over to be stuffed.Now, back to the filling - - - turn off the heat. Add in the bread crumbs and give it a twirl. It will seem dry, that is ok. Now, add the vinegar, little more/little less, and some salt and pepper. For me, that means Kosher salt and fresh ground pepper. Use what ya like!Divide the filling between the two mushroom caps. It will be a really tall pile of filling. Now, take your shredded mozzarella and cover the towers of goodness.Bake it in the oven for about 15 minutes. The cheese will get brown and gooey. Serve it up!* These did not at all turn out dry! They will look it, but, just dive it. The big cap is so juicy and delicious, as is the filling from all the veggie moisture.
