2 Tbsp Balsamic Vinegar
1 tsp dried basil or 1 Tbsp fresh
1/2 tsp garlic powder
1/4 tsp smoked paprika
1 can tiny shrimp, drained and rinsed
1/2 c reduced fat Feta cheese
1 small tomato, diced
1/4 c dice bell peppers
2 Tbsp dice scallions
1/4 c plain bread crumbs
salt (optional)

Here is how you make Shrimp and Feta Stuffed Mushrooms:

Clean and remove stems from mushrooms. In a sealable plastic bag mix vinegar, basil, garlic, and paprika. Add cleaned mushrooms and shake. Let marinate for at least 1 hour. Preheat oven to 425 degrees. In a small bowl combine shrimp, feta, tomato, bell peppers, scallions, bread crumbs, salt and pepper. Drain marinade off mushrooms and stuff with shrimp mixture.
