Stock: To make your own stock, fill a large pot with cold water. Add a mid-size frying chicken. Place on stovetop and bring to a boil. Simmer until chicken is well done.Remove chicken, and measure out stock so you have 5 quarts. (I don't add any other ingredients when I make this stock since I'm adding veggies to the soup.)Add all other ingredients to stock. Allow chicken to cool. Remove skin and bones and chop meat finely. Add back to soup pot. Allow to simmer until vegetables are tender.Based on this recipe, it should yield 32 cups (8 quarts).
