You will want several layers of cheesecloth. Spoon the yogurt on top of the cheesecloth. Place a plate on top with a can on top of the plate. Refrigerate overnight. This will drain all the excess whey out of the yogurt and make your tzatziki thick and creamy.Coarsely chop the cucumber and place in your food processor or blended. Blend until finely chopped. Now, you can do one of two things: either press the excess liquid out of the cucumbers NOW, or wait until later but the later option takes longer.Add garlic, lemon juce, spices, and yogurt.
