Here is how you make Barley Vegetable:

1. In a 2 qt sauce pot or larger, add the 3 cups of vegetable stock. Bring to a boil add the barley return to a slow boil and reduce heat to a simmer and cover. Simmer for one hour covered.2. In a 6 quart sauce pot add the olive oil add the onions, celery and carrots on medium heat for 5-6 minutes add the mushrooms and garlic. Continue cooking on medium heat for another 5-7 minutes to a tender crisp texture.3. Add the remaining vegetable stock and simmer 20 minutes covered.4. After the barley is done add it to the vegetables and return to an easy boil.
