Makes 6 servings.Preheat oven to 400*F.Spray a glass pie plate with nonstick spray.In a blender, combine:Evaporated skim milk,eggbeaters,bisquick,salt & pepper.Meanwhile, partially cook the broccoli. In a separate microwave dish cook the onions,red peppers & carrots til' tender. Mix with the broccoli & put onto the bottom of the pie dish. Top with the fat-free cheddar cheese. Slowly, pour the liquid mixture over the vegetable-cheese mixture.
