1 tbsp Szechuan or regular stir fry sauce

Here is how you make All Vegetable Spring Rolls:

Bring two quarts of water to a boil, add Napa leaves, and leave in for one minute. Once flexible, remove Napa leaves from water and set aside. Place a damp paper towel at the bottom of a steamer bowl (or microwavable bowl with UN-TIGHT lid). Place onion, bell pepper, and bean sprouts on the towel, and cover them with another damp paper towel. "Steam" them for one minute on high in the microwave. (You can choose to steam vegetables with another method, if preferred). Mix grated carrot with steamed veggies. In a small bowl, whisk together stir fry sauce and ginger blend. Lay the Napa leaves on a clean surface. With a butter knife or brush, spread the sauce blend on the stem of the leaves. Place veggies on the wide end of the leaf, with about a half inch of space between them and the leaf's edge. Roll the leaf, and tuck in the edges (as you would with rice paper). Stab a toothpick through each roll to keep them wound. Optional: Garnish by stabbing a slice of water chestnut through the tooth pick of each roll, and pour on any left over sauce.
