How Do I Make Vegetable Tabouleh?

Here is how you make Vegetable Tabouleh:

Chop all vegetables and place in large bowl. Add oil, lemon juice, bulgur and mix well. Set aside (or refrigerate) until bulgur has softened. If using course bulgur you will need to let it sit in warm water prior to adding it into the salad to allow for partial "coking" but if using fine bulgur then there is no need because the juices from the salad will soften it within a matter of minutes. You can add more lemon juice if you please as well as salt. Depending on how large or small you chop the vegetable and whether you are are using fine or coarse bulgur, the recipe usually yields about 6 1-cup servings.Number of Servings: 6Recipe submitted by SparkPeople user POMAPOO1.
