1. Cut sweet potato into 1-inch cubes. (I left the peel on, but it doesn't really matter). Microwave 4-5 minutes with a little bit of water in the bowl.2. Cut all vegetables into bite-sized (or smaller) sizes.3. Sautee everything except the syrup in a frying pan with cooking spray. Stir to avoid sticking or burning.4. When everything looks almost cooked (ie, onions are clear, mushrooms look sauteed), add the syrup.
