Mix all the dry ingredients together in a large bowlCombine the eggs with 1/2 the water and whisk until smooth.Make a depression in the middle of the dry ingredients and pour the wet into it. Fold the flour mixture into the egg mixture until well combined. A very stiff dough should form. If needed add more water 1 tbsp at a time kneading well between additions only until a stiff dough forms. Do not add too much liquid. The dough should NOT be sticky at all.Knead for at least 5 minutes. Let dough rest for 10 minutes. Cut off a piece the size of a deck of cards and flatten with the heel of your hand on a well floured board. Roll out until 1/8 inch thick. Cut in strips with a knife, 1/4 to 1/2 inch wide depending on your preference.Drape the finished noodles over the slats in your oven rack.Repeat until all the noodles are cut.Once all the noodles are cut you can add them to any rapidly boiling soup, or water and and cook until done, about 5-7 minutes.
