1 cup coconut milk
1 cup chicken stock
2 cups cooked long grain brown rice

Here is how you make Thai Chicken Coconut Stirfry:

Prepare your rice according to package directions. Set aside once cooked, with lid on, to keep hot.While rice is cooking, cut your chicken into small 1" cubes. Dredge your chicken cubes into the curry powder. Heat 1 tbsp olive oil in skillet and QUICKLY sear chicken on all sides to lock in juices. Remove from pan.Add in 1 tbsp oil and onion. Cook until softened. Add in grated ginger and cook for about 30 seconds, stirring constantly.Add in remaining ingredients and chicken. Stir well and bring to boil-then reduce to low simmer for 15 minutes. Stir occasionally. This sauce provides 4 servings.Serve over brown rice (1/2 cup rice is one serving).
