Here is how you make Lite Thai Red Curry Chicken:

Spray non-stick skillet with Pam, grill chicken. When it is almost cooked through, sprinkle with a little salt, basil and crushed red pepper flakes to taste. Put cooked chicken in a dish and set aside.Add curry paste to the pan sprayed with Pam over medium heat. stir and cook for a minute. Add onions and cook for a minute. Add garlic and cook for another minute. Add can of lite coconut milk and stir or whisk to combine. Add splash of vinegar, splash of soy, and a little sugar to taste. Sprinkle in some dried basil, or chopped fresh basil if you have it just before serving. Add chicken back to the pan and heat through.
