In a bowl combine pineapple juice, ground ginger, garlic & vegetable broth, set aside. Lay pineapple chunks over chicken and then top with water chestnuts. Pour ginger sauce over chicken. Cover and cook on high for 1 hour then lower heat to low and cook for at least 3 hours or up to 8 hours. Add green onions and turn crock pot to high. In a small bowl dissolve cornstarch in soy sauce and vinegar. Stir into crock pot and continue to cook on high for 10 to 15 minutes or until slightly thickened. Serve over brown rice.
