4 Tsp Angostura Aromatic Bitters (or juice of 1/2 lemon)
2 Medium Onions quartered
1 Tsp Salt (optional)
1" Piece Ginger Root
8 Cups Water (enough to cover chicken)
2 Tbsp Oyster Sauce
2 Tbsp Chopped Chive (Fresh)


How Do I Make Chinese Style Chicken - No Fry (3oz)?

Here is how you make Chinese Style Chicken - No Fry (3oz):

A whole chicken at room temperature (bones intact) is used. Remove any remnants of feathers and excess fat. Ensure that the cavity of the chicken is clean.Place in bowl, rub inside and out with Angostura bitters. The bitters will remove the freshness and add flavor. (The juice of 1/2 lemon can be substituted)Rinse chicken and place in a pot breast-side down.Add quartered onions and ginger.Add water until the chicken is covered.Add salt to water.Cover pot and leave to boil. When the water begins to boil, time for 6-7 minutes. Then switch off flame. The water will continue to boil. When the pot has cooled a bit, empty contents into a colander/strainer. Discard onions and ginger. (Water/stock can be saved to make soup)When chicken has cooled to the point where it can be handled, cut into serving sized pieces. Any excess skin can be easily removed at this point.Add oyster sauce and mix until all pieces are coated. Sprinkle with chopped chive and serve.You may be tempted to add other seasonings. Please try as is first. I use whole chickens only, as this recipe does not work well with chicken pieces. On occasion I have forgotten to add salt to water.
