1/2 Cup low sodium soy sauce
2 Tablespoons sesame oil
4 cloves of garlic, minced
3 Teaspoons fresh ginger, grated
1 onion, sliced
1 Tablespoon lemon zest, grated
1 Teaspoon black pepper
1 Teaspoon five spice powder

Chicken and Veg:
*All chicken and vegetables should be about the same size (2-3 inch pieces) so the skewers cook evenly.
6 boneless, skinless chicken thighs
1 1/2 Cup each zucchini, eggplant, bell peppers
12 grape tomatoes
1 Cup pineapple
2 Tablespoons olive oil
salt and pepper to taste (for vegetables only, chicken will be spiced by marinade)

Here is how you make Grilled Chicken Kebabs:

Cut each thigh into four equal sized pieces. Slice onion. Combine chicken, onion and marinade ingredients in a large ziplock back, seal and place in bowl or dish. Refrigerate for at least 3 (but up to 24) hours before cooking. Cut vegetables into same sized pieces, about 3-4 of each piece per kebab. Brush or spray the vegetables with olive oil and salt and pepper to taste. Thread chicken and vegetables on skewers. You should get six full skewers from these ingredients. Grill over medium low heat for about nine minutes total, turning every few minutes to make sure everything is cooked through.
