Ingredients:3 chicken breasts12 oz linguine1/2 cup creamy peanut butter1 cup peanut halves, unsalted1/2 cup honey1/2 cup soy sauce4 tbsp rice vinegar3 tbsp chili garlic sauce1 cup shredded carrots1 cup bean sprouts2 tbsp vegetable oil1/2 tbsp ground gingerDirections:1. Boil a large pot of water and add linguine2. Heat vegetable oil in a large pan or wok3. Add diced chicken, ground ginger and peanuts to wok and heat until chicken turns white4. In a separate bowl whisk peanut butter, soy sauce, rice vinegar, chili garlic sauce* and honey5. Add carrots and bean sprouts** to wok and sautee for 2 minutes6. Add sauce to wok and let simmer7.
