1 T oyster sauce

4 tsp sugar
2 t. better than bouillon chicken base
1 T rice vinegar
? tsp ginger, minced
? tsp garlic, minced

3 chicken breasts
4 tsp sesame oil
? tsp ground black pepper
? tsp salt
3 med. sweet onions
1 whole stalk celery (16 spears) including leaves
5.25 oz matchstix carrots (1/2 bag)
12 oz. bag mung bean sprouts

Here is how you make Chicken chow mein, Amberlyn's:

Whisk together the chicken broth, oyster sauce, cornstarch, rice vinegar and sugar in a small bowl, and set aside. Cut up and season the chicken with the sesame oil, salt, and pepper, and set aside. Heat the skillet over high heat. Heat the peanut oil until very hot. Add the ginger and garlic and stir-fry, until fragrant, about 30 seconds. Add the chicken and stir-fry, until lightly browned, about 2 minutes. Remove from heat, pour into a large bowl. Add a little oil to the pan along with the onion, celery, and carrots and stir-fry, until crisp-tender, about 2 minutes. Spread the ingredients to the outside of the pan to form a well in the center. Pour the chicken broth mixture into the well, bring to a boil, and stir to coat the chow mein mixture. Stir in the bean sprouts and the meat (along with the juices). Leave in just long enough to allow the sauce to thicken. Remove from the heat. Transfer chicken chow mein to a warm platter and top with the fried noodles. Serve immediately with rice.
