4 Packets Trader Joe's Savory chicken broth concentrate
4 Cups Water
2 Cans Straw Mushrooms
7oz Thai Kitchen Stir Fry Rice Noodles
Juice from 1 Lime
A Taste of Thai - Red Curry Paste, 2 tsp (to taste)


How Do I Make Thai Coconut Chicken Noodle Soup?

Here is how you make Thai Coconut Chicken Noodle Soup:

1 - Chop Onion, cut lemon grass into 3/4" long pieces, and rough chop cilantro.2 - In a large soup pot, drizzle 2 Tbsp olive oil and add onion, lemon grass, and cilantro and fish sauce.3 - Cook over medium heat for 7 minutes - do not brown onions. 4 - Get pot of water boiling to cook noodles.5 - Add 1 of the cans of coconut milk, 2 packets of broth concentrate, and 2 cups of water. Cook for another 7 minutes.6 - Cut chicken breast into 'spoon size' pieces.7 - Strain out onion, cilantro and lemon grass fron soup pot, return soup to pot, adding remaining coconut milk, 2 packets of broth concentrate, and 2 cups of water.8 - Return to boil.
