Here is how you make Chicken and Butternut Squash Curry:

Dice the onion and chicken and lightly brown in a pan using a low-fat oil spray. Chop the ginger, chilli and garlic and add to pan along with other spices. Dice the Squash and Potato and add to pan. When they start to stick, add the tomato paste (puree) and water. Cover and leave to cook, stiring occasionally, until the squash and potato are fully softened and the liquid is thickened.
