The ingredients for Chicken and Kimchi Stew are:

Dwaejigogi Kimchijjigae

3 chicken breasts
2 tbsp refined rice wine
6 sprinkles ground pepper
4 fistfuls Kimchi (adjust to your liking; for me this means ~4 cups). Longer fermented Kimchi is better for this meal, however if your Kimchi is new, add 1 tbsp of vinegar into the Kimchi. It is like instant fermenting.)
1 small onion, chopped
1 block tofu
1 stalk of a spring onion
2 cups water
6 shiitake mushrooms (more or less to taste - we used dry, which needed to be re-hydrated about two hours prior, minimum)
1 green Korean chili

For Sauce (Combine well)
4 tsp Korean chili powder
2 tsp Gochujang (Korean chili paste)
4 tsp soy sauce
1/2 tsp minced garlic (2 cloves)
2 sprinkles ground pepper


How Do I Make Chicken and Kimchi Stew?

Here is how you make Chicken and Kimchi Stew:

First, you can find Gochujang at any Asian market (it comes in a little red tub). There is NO substitute for it, so don't even try. -Cut the chicken into smallish pieces and toss with the rice wine and a few sprinkles of pepper. Let marinate at least 15 minutes.-Chop your onion, mushroom, spring onion, peppers, and tofu-Mix together the "sauce" ingredients--it will make a thick VERY STRONG paste.-Heat 1 tbsp oil in a large dutch oven or pot. Add kimchi and cook until soft. Then, add chicken and cook until completely done.-Add everything else (tofu, mushrooms, paste, etc) EXCEPT the spring onion and chile, which will be used as garnish. Also add the 2 cups of water, or more if you want a soupier stew.-Bring to a boil and let simmer for at least 10-15 minutes; it can also sit on the stove more or less indefinitely.-Serve with rice.Number of Servings: 8Recipe submitted by SparkPeople user DASMONDSCHAF.
