Chop up your veggies of choice. Heat a large pan or wok if spray with olive oil or any non stick spray. Add veggies and chicken and soy sauce. Let them cook until soft and easy to stick a fork into veggies. Meanwhile in a small sauce pan bring 1 cup of water to boil, then add quinoa stir occasionally.
