Marinate chicken breasts overnight making sure to poke them occasionally with a fork so the marinade soaks in well. Slice them in bitesize chunks. In a large frying pan or wok, add oil and stir fry the carrots, garlic and onions for about 5 minutes. Add all other ingredients including the marinade sauce from the chicken and stir fry til chicken is done. Finish up with a splash of soy sauce and serve over rice. Serves 4.
