1 can (15.25 oz) pineapple chunks or tidbits packed in juice
1 tbsp brown sugar
1 tbsp reduced sodium soy sauce
2 tbsp rice wine or white wine vinegar
1 bell pepper
2 tbsp cornstarch

Here is how you make Grown-up Sweet and Sour Chicken:

1) Bring 3 cups of water to a boil; add rice, cover, and simmer 20-25 minutes or until tender. 2) Meanwhile, heat oil in extra-large skillet. Slice carrots at an angle and add them. Chop onion coarsely and add to the skillet. Stir occasionally to keep from sticking.3) Cut chicken into bite-sized pieces (thinner will cook faster) and add to the skillet. Mince or press the garlic and add it with the ginger. Stir occasionally until chicken is cooked.4) Clean and cut pepper into strips or pieces, as desired. Drain the pineapple juice into a measuring cup and add enough water to make at least a cup of liquid. Once the chicken is cooked, add the juice mixture to the skillet and heat to boiling.5) Add the pepper, vinegar, brown sugar, and soy sauce to the skillet. Mix the cornstarch with a little water in a small container until it is smooth and add it to the skillet. 6) Stir frequently while heating 1-2 more minutes, or until the liquid thickens.
