I made this up after reading a Cooking Light recipe for oven fried chicken dipped in a mixture of buttermilk and cajun seasoning, then dredged in panko. You could probably use green curry, too. Also, my directions are for oven fried, but you can also pan fry. I tried the CL recipe first with pork chops, so that could work well here, too, even salmon. Preheat oven to 400F. Line a large baking sheet with foil or parchment paper. Oil the covering with approximately 1 tsp oil (or spray).2. Mix coconut milk and curry paste in shallow bowl.3. Put Panko crumbs in another shallow bowl.4. Dip 1 chicken breast in coconut milk mixture (you may need to rub a bit off back into the bowl if the coconut milk is thick.).5. Next, dip the coated breast into the panko crumbs, turning to cover completely. Place on prepared pan. Repeat with rest of chicken. 6. Spray chicken with canola oil or cooking spray.7. Bake in oven for approximately 15-20 minutes, depending on the the thickness of the chicken, or until done.
