Add the curry paste, chili flakes, ginger and lime zest and cook until fragrant - about 2 minutes. Add the onion and salt and cook, stirring, until onion is soft, about 3 minutes. Add the red pepper, zucchini, baby corn and tofu, stir to combine. Cook 3 minutes, until pepper begins to soften. Add chicken stock and bring to a boil.Reduce heat to low and simmer 10 minutes. Add chicken, greens and coconut milk and simmer until greens are cooked, about 5 minutes.
