Best served over rice.* If you choose to have rice, start which ever kind you choose, first.-Heat a wok (or large skillet) with 1/2 the sesame oil over medium heat-add all garlic-Wash and slice the potatoes into 1/4 inch slices, then slice in half; add to the wok; toss 3-4 times to mix oil and garlic in-peel the carrots, remove ends, and cut diagonally into 1/4 inch slices; add to wok and stir generously to mix in-cut the onion into thirds across the peels, then cut into 1/6ths. Should resemble large wedges. Add, whole, to the wok; add to wok and stir again-add remainder of sesame oil and stir again-cut the chicken into 1/2 inch cubes; add to wok and stir again-cut the curry sauce mix (its dried) into large cubes and add to wok; stirring frequently-add 1 cup of the water and stir heavily-let simmer for about 5-10 mins; stirring frequently-add the remaining water; continuing to stir-turn the heat down to medium low-continue stirring until potatoes have gone softAt the point that the potatoes are soft, the chicken should be done (make sure it is).
