Cook rice and cool. I put in the rice cooker beforehand and store in fridge.In a large skillet, heat 1 tsp canola oil. Add diced tofu and saute until slightly browned. Set tofu aside.In large skillet, heat 1 tbsp canola oil and 1 tsp chili oil. (Or add red pepper flakes to canola oil). Saute onions and carrots until onions start to turn transparent. Add remining vegetables, tofu, and rice, and 2 tbsp lite/low sodium soy sauce, and heat through until vegetables are desired consistency.
