Set aside a large salad bowl.In a Magic Bullet or small blender cup add together lime juice, ginger, Ponzu, peanut butter, rice vinegar and sesame oil and blend till creamy. Pour mixture into salad bowl.Thinly slice 4 cups of Napa Cabbage and 4 cups of red cabbage, wash and rinse and place in salad spinner.Chop 1/4 cup of red pepper into small pieces.Wash and rinse a 1/4 cup of cilantro.Put all vegetables in bowl and toss until thoroughly blended.Take 1 serving of cashews (about 14) and chop finely (or turn to rough powder in Magic Bullet).
