Here is how you make Cindy's Daikon-Carrot Salad:

Peel and shred daikon (or cut into thin ribbons with veg. peeler). Put in a colander, toss with salt and leave to drain over a bowl for about 1/2 hour. Meanwhile shred carrots and thinly slice the scallion into a large bowl and mix the dressing ingredients in a small dish. After about 1/2 hour, give the daikon shreds a good squeeze to get as much liquid out as possible and toss with the carrot and scallion.
