- 1 Roma tomato
- 1/4-1/2 cup mushrooms
- 1 cup broccoli
- 1 clove garlic (minced) or 3 tsp of already minced garlic
- 1 cup green beans (fresh)

For Sauce:
- 1 tbsp Sesame oil
- 1/4 cup peanut butter
- 1 tbsp Soy Sauce
- 1 tbsp Lemon Juice


How Do I Make Vegetarian Stir Fry with Peanut Butter Sauce?

Here is how you make Vegetarian Stir Fry with Peanut Butter Sauce:

Cut up all your veggies and tofu BEFORE you start cooking. 1) With a little water (or olive oil), heat up your pan or wok to about Medium or Medium-High heat. 2) Add your green beans to the pan and stir until the green beans have a nice green color to them and are crisp but not too crunchy. 3) Remove the green beans and set aside. Add your other veggies to the pan and stir until the mushrooms are a dark color, the broccoli is a nice smooshy green, and the tomatoes are soft. Then, remove from heat. 4) Add your tofu to the pan and cook, stirring occasionally, until the tofu is brown on each side. It shouldn't be crunchy, but it should have a nice golden color. 5) Remove your tofu and mix in a bowl with the other veggies. 6) Combine your ingredients for the sauce in the pan on low to medium heat. Stir until sauces are mixed together and peanut butter is more of a sauce than a spread. 7) Pour sauce over veggies, stir until coated, and serve!
