After all the time I've spent in Thailand I find myself craving curry ALOT. But Thai curry is delicious for one horrible reason. The whole base of the sauce is full fat coconut milk, which is basically saturated fat. This one doesn't quite achieve the body to be a curry sauce, it's definitly a soup, but if you cut down the almond milk by half I think you could turn it into a curry to go on rice as well.

1 box of sweetened original flavour Almond Breeze almond milk.

1 chicken bouillion cube or 2 tsp Better Than Bouillion

10 small yellow potatoes

2 small zuchinni

2 carrots

2-3 tbsp Thai Yellow Curry Paste

1 tbsp coconut extract.

1 tbsp lime juice

1 tbsp fish sauce (soy sauce works too, but fish sauce is best)

Here is how you make Thai Yellow Curry Soup:

Makes 6 servings.1. In a large saucepan or a wok mix together 1 cup of the almond milk, the curry paste and the chicken bouillion. Cook on high until the curry starts to collect on the surface (when you stir it will be a lighter colour underneath). This is an important step, it develops the flavour of the curry. 2. Cut the chicken, carrots and potatoes into bite sized pieces. Turn the heat down to medium and add chicken, potatoes and coconut extract.3. About five minutes later add the carrots.4. Allow to simmer until the chicken and potatoes are JUST ABOUT cooked through. 5. Add the zuchinni6.
