- 1/4 tsp ground white pepper
- 40 wonton wrappers
- 1 egg, slightly beaten

- 2 oz thinkly sliced green onion, cut on the bias
- 1 gallon chicken stock
- 2 1/2 oz soy sauce
- 1/4 tsp salt
- 1/8 tsp ground white pepper
- 6 oz spinach, stemmed

- 1/2 oz canola oil
- 4 eggs, beaten

Here is how you make wonton soup:

1) to make filling, combine chicken, green onions, ginger, soy sauce, and sesame oil, along with salt, sugar, and pepper, and mix well until thoroughly combined.2) spoon 1 tsp of the filling into the middle of each wrapper, and brush the edges of each wrapper lightly with egg mixture. fold the wonton in half to make a triangle, then overlap the points and press them in place. cook in boiling salted water for 2-3 minutes, or until cooked through. drain and reserve.3) to make the soup, heat the oil in a soup pot over medium high heat. add the green onions and genger and saute, stirrung frequently, until aromatic, about 1 minute. add the stock, bring to a boil, and season with soy sauce, salt, and pepper. 4) bring a large pot of salted water to a rolling boil, add the spinach, and blanch for 30 seconds. drain and rinse in cold water, then chop coarsely.5) to make the omelet, heat the oil in a medium skillet. cook the eggs, stirring constantly until they are set. flatten the eggs into an even layer and roll the omelet out of the pan. allow it to cool slightly and then cut into a fine julienne.6) add spinach and omelet to soup, and simmer until warm. 7) place wontons (3 per serving) into a bowl, and top with a cup of soup and serve.*note* to reduce sodium, omit all salt and use a low sodium soy sauce.Number of Servings: 10Recipe submitted by SparkPeople user SPRINGFIELD81.
