In a separate frying pan, fry garlic and ginger with vegetable oil until slightly browned. In the meantime, mix the cornstarch with some water and set aside. Add chopped tofu to garlic and ginger and continue cooking on medium heat then add soy sauce and black bean sauce and stir together cooking for another couple minutes until everything is hot. Add cornstarch mixture to the pan and keep it on low heat until the sauce thickens. Add chopped scallions, a dash of salt and hot pepper flakes for some spiciness ( not to many pepper flakes if you don't like it spicy ). Serve immediately. The dish is best served on top of white rice, I serve it with Japanese rice - place rice in a bowl and top with the Mabo Tofu mixture. You can sprinkle some scallions on top as well. You can adjust the pepper flakes, soy sauce and black bean sauce to your own preferences. We like things a little spicy in our house however, if you prefer a milder dish, you can skip the pepper flakes altogether.
