Makes 1 serving @ 1.5 cPut adzuki beans in a pot with 2 cups water and optional dash of salt. Bring to a boil. Cover and refrigerate 6 hours or overnight.After soaking, drain liquid and replace with 2 cups fresh water. Bring to a boil, then cover with a tilted lid to vent, and simmer on low heat 40-45 minutes until very tender. As the beans cook, add more water if necessary to keep from sticking. Prepare brown rice according to package directions.Slice squash and onions. Saute in olive oil with whole cloves until caramelized. Remove cloves.Steam spinach.
