Here is how you make Thai Peanut Vegetable Stew:

In a medium-sized mixing bowl, combine cornstarch with enough vegetable broth to dissolve. Whisk together then add peanut butter, lime juice and sugar (optional). Whisk again until smooth and set aside.Heat EVOO in a large soup pot. Add onions and cook until translucent. Add garlic and cook until fragrant. Layer the carrots, broccoli, cauliflower and bell pepper onto the onions and garlic. Do not stir. Pour in 1 cup of vegetable broth and bring to a boil. Cover and let cook until vegetables are slightly tender. Add the sauce and the remaining vegetable broth. Add Bragg's or soy sauce to taste.
