Here is how you make Vegetable Lo Mein:

Coat a wok or large nonstick skillet with 1 T. olive oil. Mix 1 T. cornstarch with a little water and set aside. Toss vegetables in to pan and stir fry until tender crisp. Add garlic, soy sauce and ginger - cook 2 minutes. Add cornstarch mixture and stir until thickened. Drain noodles, add to vegetable mixture and toss.
