Shiritake noodles are INCREDIBLY low in calories, so this makes for a very nice, filling lo-cal lunch or dinner. They have a very strange, rubbery consistency if boiled like regular noodles, so I thought I'd stir fry them to see if that helps. It did! They are like normal noodles when stir fried. My grocery store sells them in the refrigerated tofu department. They come in a bag, packaged in water.By the way, I don't know if this actually qualifies as "vegetarian," with the egg and fish sauce, but the site didn't give me any other "no meat" options.

Here is how you make Shiritake Vegetable Stir Fry:

Rinse and drain the shiritake noodles, and dry them well between paper towels. Heat a non-stick skillet with the olive oil. Scramble the egg and cook it quickly in the heated skillet. Remove egg and put the frozen vegetables in the pan, stir frying for a few minutes, until no longer frozen. Add noodles and sprinkle the sesame oil and fish sauce over the mixture, to taste.
