BLENDYBLENDYBLEND! Chop up all ingredients except for the wrappers in a food processor until thoroughly blended. I'd recommend crunchy things (onions, water chestnuts, ginger) first, then shrimp, then pork, then sake and soy.Put about a teaspoon or so of filling into each wrapper and pull the edges in to the center. My two favorite ways are to just pull creases together and get little cups or to pull 4 "corners" and get a little diamond. Tap the bottoms on the counter so they get flat.
