4 small to medium potatoes (15 oz was used for this)
1/2 green bell pepper
1/2 red bell pepper
2 whole peeled carrots
1 serrano chile, could use jalapano
juice from 1 lemon
garlic salt and pepper to taste (I used it genereously)

Here is how you make Baked Pork w/ Vegi's and Potates:

Pre-heat oven to 375. or higher (my casserole dish has max temp of 375)Cut potatoes in quarters, put in casserole dish. Cut all other vegetables into bite size pieces and put in dish. Sprinkle with garlic salt and pepper to taste. Could always add other seasonsSeason pork with garlic salt and pepper on both sides. Place pork on top of vegetables.
