4 Large Tomatoes (you may want extra if they're not super large)
1 oz shredded part skim mozzarella
1/4 cup part skim ricotta cheese
1 cup small diced eggplant (can be substituted with whatever vegetables you have handy - I think zucchini or mushrooms would work nicely)
1/4 cup chopped fresh basil (can be substituted with a tablespoon or so of dried basil)
1 lb 93% lean ground beef
1/4 cup chopped onions
2 large cloves of garlic
Salt and Pepper to taste

Here is how you make Indulgent Baked Stuffed Tomatoes:

Preheat oven to 350 degrees.Season beef with salt and pepper to taste. Brown ground beef over medium high heat. When beef is browned, add onions, garlic, and eggplant. Sautee until vegetables are softened.While beef and vegetables are cooking, prepare tomatoes. Spray a baking pan or sheet with cooking spray. Then, cut off the top of each tomato and scoop out the insides of the tomato so that you have a tomato "bowl." Discard tops and insides of tomatoes. Place in baking pan. For a little extra flavor, sprinkle salt and/or pepper to taste around the insides of the tomatoes.Once beef and vegetables are cooked, turn off heat. Add basil, mozzarella, and ricotta. Stir until combined. Stuff each tomato with 1/4 of meat mixture.Bake tomatoes until hot and bubbly, about 20-25 minutes.
