Wash well 12 baby red potatoes. Cut these into 3/8 inch thick pieces. Lay these on a baking pan sprayed with PAM. Cover pan with wax paper. Bake in microwave 3 1/2 minutes on high.

While potatoes are cooking, wash & chop 3 plum tomatoes into pieces.

Add 6 oz of pre cooked & drained ground sirloin (10% fat). Spread evenly over the layer of potatoes. Sprinkle 1 tsp of powdered garlic over the layer, as well as 2 tsp of basil. Cover the beef with the tomatoes, then add a layer of 1 1/2 C sliced mushrooms. Use 1/4 tsp red pepper on top of this layer. Cover again. Cook for 4 minutes on high.

Add 4 oz mozzarella cheese to the top of casserole. Heat for 1 1/2 minutes uncovered. Let the pan set up while you measure out 2 oz portions of baby spinach for each serving. I put it into a bowl, microwave it for 30 seconds and serve the casserole into the center. ENJOY.
