What Are The Ingredients For Lamb, Bean and Onions Casserole Recipe?The ingredients for Lamb, Bean and Onions Casserole are: 800g lean lamb, cubed2 tbsp oil 4 tomatoes, chopped 3 onions, halved and sliced 200 ml hot water 2 bay leaves sprig thyme, chopped OR 1 tsp dried thyme 240 g (drained weight) cooked beans (chickpeas) pinch chilli powder 1 tbsp ground cumin seeds 1 tbsp ground coriander seeds 2.5cm (1 -in) ginger, grated 4 cloves garlic, crushed 6 tbsp yoghurt salt & pepper to taste 4 cardamom pods 5 cm (2 in) piece stick cinnamon How Do I Make Lamb, Bean and Onions Casserole?Here is how you make Lamb, Bean and Onions Casserole: 1. Marinate the lamb with the chilli, cumin, coriander, ginger, garlic, yoghurt and salt and set aside for 1 - 2 hours (or overnight).2. Cut the onions in half and finely slice them. 3. Heat the oil in a large saucepan over a medium high heat, add the sliced onions, stirring occasionally, until golden brown. Set aside approx 1/3 of them for garnish . Add the cardamom and cinnamon and let them sizzle for 4 - 5 seconds add the lamb and the marinate and fry for a minute or two more, stirring constantly.4. Add tomatoes about 200ml hot water, bay leaves and thyme and bring to boil, stirring.5. Cover, lower heat to very low and simmer for about 30 - 40 mins until lamb is very tender. Remove the lid towards the end of cooking, to allow the liquid to reduce down until required consistency is acheived. 6. Gently stir in cooked beans and cook for 1 - 2 mins to heat through. 7. Serve garnished with the remaining fried onions.To reduce any surplus fat in this dish, skim the top of the casserole before adding the beans. An easy way to do this is to lay kitchen paper on the top until it has absorbed the fat.
