Here is how you make Cajun Red Beans:

Heat oil in thick wall pan and add smoked sausage. Cook with minimal stirring until sausage is crisp on edges and some of fat rendered. Add onions and celery and cok for 2-3 min then add red pepper seasonings (except salt) and garlic. Cook for 4-5 min. Add rinsed and drained beans and chicken stock. Cook until heated through and beans starting to break down. Mash some of the beans to thicken and season with salt and hot sauce to taste. Garnish with green onion.
