Pick out any bad ones. Put beans in Dutch oven and cover with approximately 6 cups water. Add chicken cubes, a pinch of baking soda and garlic. Bring to boil for two minutes. Remove from heat, cover and let stand for at least one hour. DO NOT DRAIN BEANS. Add tomatoes, seasonings and vegetables. Cook until beans are almost tender (approximately 30 minutes). Add sausage and cook until beans are as tender as you like. If you want the dish thicker, mix a teaspoon of corn starch in a little water to make a paste and stir into simmering pot.
