Bring to a simmer. Simmer everything over low heat for at least several hours. An hour or so before serving, remove hocks and let cool. Remove meat from hocks, shred and return it to pot, discarding bones (or making your dog very very happy). Continue simmering. Correct seasoning. Serve hot. Great for a barbecue or potluck. Leftovers are even better than the original!
