Cabbage, fresh, 2 cup, shredded
Carrots, raw, 2 medium, sliced
Celery, raw, 2 stalk, medium, sliced
Onions, raw, 1 medium, chopped
Red Wine Vinegar, 2 tbsp
Lemon juice, 2 tsp
Garlic, 2 cloves minced
Salt, Pepper, Dill

How Do I Make Beef Borscht?

Here is how you make Beef Borscht:

Pierce beets with fork, wrap in foil, roast in 400 oven about one hour or until fork tender. Cool. Peel and cube into bite size pieces.While beets are roasting, dredge beef in flour, heat oil in soup pot, brown beef. Add canned tomatoes and beef broth. Simmer 30 minutes. Add cabbage, carrots, celery, and onion. Simmer another 30 minutes. Add beets, garlic, red wine vinegar, lemon, plus salt and pepper to taste. Simmer 15 minutes. Add freshly snipped dill (or if you don't have it dry dill or dill seeds) Serve warm. Additions that will change the calorie content: some people add 1 - 2 tsp sugar in the last step; depends on my mood and how sweet the beets are. Delicious with a bit of sour cream.
