Here is how you make traditional beef casserole:

I use whatever root veggies are available and slice and chop them first. I then coat the beef in flour and brown it in a big casserole pot on the stove top. I add the onions for a minut until soft. Then I add all the root veggies and the mushrooms. I add my stock until it covers everything in the pot. I then put it in the oven on the middle shelf and cook it at a medium to high heat until all the veggies soften and the meat is tender. This usually takes about 90-120 minutes. You could also cook it longer at a lower temperature as well. I serve it in a bowl with a chunk of fresh bread. Even my two toddlers like this one!
