1 lb frozen beef liver (could use pork) Hint: I open frozen package, place in ziplog bag, pour milk over the top and thaw in milk.)
5 tsp fresh minced garlic
3 Tbls olive oil
1 cup diced red bell pepper
2 tsp salt
1 Tbls ground pepper
2 Tbls cumin seed
1/4 cup minced onion
1 Tbls lemon juice
4 tsp Worcestershire sauce
1/4 cup flour (more or less for desired gravy thickness)
Water : if sauce too thick


How Do I Make Roo's Beef Liver Dinner?

Here is how you make Roo's Beef Liver Dinner:

Cut liver into bite-sized chunks. In hot skillet, toast cumin for a few minutes, set aside. Add oil to same skillet, saute bell peppers for a few minutes, then add onion and garlic and saute until veggies are soft. Transfer to a blender or food processor. With same skillet, add oil. Dredge livers in flour that was seasoned with salt and pepper. and sear in skillet. (Med heat for about 2 minutes each side.) Remove livers to plate. To same skillet, add lemon juice and worstershire sauce, scraping the bottom of the skillet to deglaze, add a little water to have enough to make a sauce. Pour into blender and puree with veggies to make sauce. Return to pan, add flour if needed to thicken. Return liver to sauce, and heat through (another 2 to 3 minutes.
