1 pound ground beef, 80% lean
1 onion, chopped (about 1 cup)
1 can chopped tomatoes
1 can corn
1 can green chilies (7oz)
1 can enchilada sauce
2 cups cheddar cheese, shredded
about 12 corn tortillas, torn into quarters
seasonings to taste: I use Seasoning salt, Chili powder, garlic powder and onion powder


How Do I Make Jeni's Beef Enchilada Cassarole?

Here is how you make Jeni's Beef Enchilada Cassarole:

Pre heat oven to 350 degrees F.Cook ground beef and onion until done in skillet. Season to taste. Drain & blot with paper towels. Pour enough enchilada sauce to cover bottom of 9x13 cassarole dish. Pour remaining into small bowl. Drain tomatoes, chilies and corn. Mix together in a small bowl. Dip tortilla pieces, one at a time, in enchilada sauce, then cover bottom of dish in a single layer. Spoon half of hamburger mixture evenly over tortillas. Spoon half of vegetable mixture evenly over hamburger. Cover with 2/3 cup cheese and another layer of dipped tortilla pieces. Repeat with remaining ingredients, ending with another layer of tortillas and the remaining 2/3 cup cheese. Pour any remaining sauce on top of cassarole (there probably will not be any).Bake uncovered for 30 minutes at 350 degrees f, or until hot through and bubbly.Serving Size:?makes 6-8 servings
